"The subject of the complaint was the cover of Ortiz's recently released autobiography, entitled This is Going to Hurt. The book's cover features Ortiz wearing the UFC Light Heavyweight Title is intellectual property of the UFC. As such, its use in promotional materials requires the company's approval per the terms of its standard contract."

Shouldn't the book publisher have known that it could have been a problem beforehand?

Isn't it the publisher's problem, since the cover is their property? Anyway, I think all these legal issues left and right that the UFC is involved in is tarnishing their image and those renegotiating their contracts will think twice if another organization has gotten a foothold and can offer a contract, too.

I think that's usually the case.
I wouldn't bother to check what the request really says, but I think this is just a matter of principle from Zuffa's point of view. It's just their policy to never ever allow any tiny thing related to their property on anybody else's product, and they just automatically sue you if anything comes up. It's not exactly like they are absolutely happy doing all these things (they may be happy in this case, though), but once you start it, you can't really stop it. It's a snow ball thing that never ends. That's just the way things work in the US more often than not.
