I thought it would be nice with a thread where everyone can post some tips on nutrition.
Mine (maybe everyone knows this but anyway): If you are worried about the high GI in boiled potatoes, do like this: Boil them, cool them down and warm them up again. This way they will have a very low GI.

Now post yours.

Where did you hear this? I've never heard of such a thing. Raw or cooked potatoes are high gi. The cooking method had very little effect on the gi of a food.

Here for instance. It`s in swedish, but check the "Potatis, kokt, kyld och sedan återuppvärmd", which means potatoes, boiled, cooled down and then reheated=GI 33. Compare to for example "Potatis, Prince Edward tärnad och kokt i 15 min"= potatoes, cooked 15 min= GI 90. Fredrik Paulun is one of Sweden`s most known nutritionists, so I trust him on this issue. I`ve also heard it on another forum. I can`t give you any good explanation to why it would be like this though.

Maybe I should add that the numbers in the table are standardized with white bread=100.

That is quite interesting. I'm going to do some research on Mendosa's site and see if I can find anything like that because I don't recall him ever saying anything like that and he's the king of the gi table. LOL
